Pasta salad with yoghurt poppy seed dressing

Ingredients

500 grams pasta shells (cooked)

150 grams snow peas (blanched)

250 grams cherry tomatoes (cut in half)

1 x 425 gram can of tuna in springwater (drained)

Poppy Seed Dressing

1/2 cup natural reduced fat yoghurt

1 tablespoon lemon juice

1/4 teaspoon dried rosemary leaves

1 teaspoon dried basil

1 teaspoon dried mustard powder

1/2 teaspoon poppy seeds

1 tablespoon chopped fresh parsley

Method

1.  Combine pasta, snow peas, tomatoes and tuna in a large serving bowl.

2.  Place dressing ingredients in a screw top jar and shake until well combined.

3.  Pour over salad and toss.

Tip – for a change, use diced skin-free chicken instead of tuna.
